
As most of you know, Chase has Celiac which is an allergy to Wheat, Barley, and Rye. He still does not show any symptoms of Celiac but I have really felt like I have needed to get him on a Wheat Free diet for a while now but have felt overwhelmed at the task. A completely gluten free diet is the only cure for Celiac.
So I am happy to say, that he has been on a completely Wheat Free diet for almost 2 weeks now. I have been making him breads and cookies from Rice Flour, Potato flour and Tapioca Starch. He actually is really liking it and hasn't been to upset by us not letting him have anything yet. I am sure when we start to travel during the summer it will be very hard. Everything has wheat in it. We won't be able to stop at McDonalds and get him a happy meal with the other kids, so this is going to take some real planning for sure. It will also mean a sacrifice from our other children as well. I now need to figure out what do for him for the Sacrament, I am sure I can just take his bread to church and they can bless it in a seperate container or something. But I am really trying to get this right.
I asked Chase if he has felt any better since being on this diet, and he said he is now officially the fastest kid in his grade. Funny!

Awesome... I actually found a gluten free cookbook the other day that I bought for you. Some of the recipes sound quite delicious actually. so you'll have to see me when you're in town next... :) and still have a knife set with your name on it!
